It's been a couple of years since I used Activesync because I now use Windows Mobile Device Center(WMDC) on my windows 7 and vista computers. If I recall, you can open up activesync on your computer and go to options and select what you want your device to sync with. I don't remember if you have to have your mobile device connected to your computer to have the options come up and be selectable. Try it first just using the computer to bring up activesync and if options is not selectable then try it again with the mobile device connected.

sprint pushed a OTA provisioning update, it happens 2-3 times after initial activation then it stops. I had the same thing happen and found in the logs what was happing. , if it happens more then a few times then either the update isn't taking and you should call customer service and request the PRL and other updates to be pushed. Just call from a different phone because they will walk you through a few steps. you can also try manually requesting it by the update PRL button in settings.
